In our active busy lives we often skip healthy eating in exchange for an easy meal. How often have you stopped to pick up food from your local restaurant on your way home? How many pizzas have you ordered at the end of the day. Home cooked meals are not only healthier but they can be fun and quick to prepare. They can also be as delicious as your local take out without the added sugar and fat used by restaurants.
Firstly, I am not a chef. I am a health coach who loves to eat delicious food! I have learned that it doesn't take a lot to prepare something yummy at the end of the day. I am also a firm believer in simplifying things. When I prepare something I make enough of it so that it can be transformed into other dishes for other days. If one doesn't have to start from scratch after a crazy day at the office one is far more likely to eat a nutritious dinner rather than order in containers of high sodium fatty foods.
